I’ve been quite occupied with some work lately so it was a bit too late when I finally realized that my fridge only had some left over vegetables (that are not going to last for another week) . I had 2 options, cook them or buy M*D burger outside the house… What a lucky day!

Here what I had in the fridge; a bunch of kailan, scallion, a handful of noodle, a small bag of shimeji mushroom and egg. As a true carnivore, this was really a painful situation. I could have just cooked the usual fried noodle, but come on… that is the least you want to eat (aside from M*D burger) after a full day of work in the office. So I thought, lets just improvise with them and see how it turned out.

Well who knows?? It turned out good! The noodle is tasty and slightly spicy. I’ve never thought that this bunch of noodle and vegetables could be so nice. Conclusion? Next time you’re stuck with left over ingredients, don’t give up, just go with your instinct and cook :).. it might just turn out better than you thought it would be.

Almost Vegetarian Noodle and the Mollet Egg

Things you needs:

  • Bunch of Kailan
  • A handful of noodle
  • Shimeji Mushroom (chopped)
  • 1 Egg

Seasoning:

  • 4 cloves of garlic (minced)
  • 1 cm Ginger (minced)
  • 1 tsp rice wine
  • 2 tbs honey
  • Bunch of scallion (chopped)
  • 2 tbs Soy sauce (you can adjust as you like)
  • 2 tbs Sesame oil
  • 1 tsp corn flour
  • 1 tsp chilli flakes
  • Vegetable oil

Things you need to do:

Blanch the kailan with a pinch of sugar until cooked. Set aside.

Boil water in a saucepan and cook the noodle. Set aside.

Boil the egg until it is cooked on the outside and it is still runny in the inside (about 2-3 mins for medium egg).

Put all seasoning ingredients in a small bowl and mix well. Saute all seasoning with a bit of vegetable oil until the garlic cooked and fragrant. Put aside 2/3 of the seasoning in a bowl and mix it well with the noodle.

Stir fry your mushroom with the remaining seasoning mixture, mix corn flour with water, and pour it into the mushroom, reduce. Once the mushroom is cooked, pour it on top of the Kailan.

Serve the noodle with the mollet egg and Kailan.
