Noodles duo

I found this noodle recipe is delicious and so easy to make..

It is has that beautiful natural green color from the spinach puree. So using the same recipe, i improvised and changed the spinach with the carrot just to get a different variation in taste and color, and it worked!

I made a delicious crispy garlic pork chop to compliment the noodle. Both noodles (spinach and carrot) were delicious.

Noodle Recipe

Makes 4 portions

Things you need :

  • 1/2 bundle of spinach
  • 1 medium carrot
  • 2 eggs – whisk a bit
  • 1 egg yolk
  • 2 1/2 cup of all purpose flour
  • 2 tablespoon of vegetable oil
  • 2 teaspoon of sea salt
  • Some extra flour for dusting and storage purpose

Things you need to do:

Blanch the spinach till it cooked. Set it aside till it cools down, drain well and transfer to a food processor to make a puree. Set aside
Cut the carrot to small pieces, then boil it till it cooked. Set it aside till it cools down, drain well and puree it. Set aside.

Spinach Noodle:

Put in the eggs and egg yolk into the food processor, blend it until fully combined. Pour in 1/4 of the flour, give it a few pulses then put in the spinach and mix it again till it blends. Pour in another 1/4 of flour and 1 tsp of salt.
Again, few pulses then just keep blending while drizzle in 1 tbs oil at the same time. Blend till combined.

Carrot Noodle:

Put in the eggs and egg yolk into the food processor, blend it until fully combined. Pour in 1/4 of the flour, give it a few pulses then put in the carrot and mix it again till it blends. Pour in another 1/4 of flour and 1 tsp of salt.
Again, few pulses then just keep blending while drizzle in 1 tbs oil at the same time. Blend till combined.

Kneading:
Sprinkle some flour on the working surface. Transfer the dough over and knead till elastic. Sprinkle some more flour either on the surface or on the dough if too sticky.

Rolling and cutting:

Wrap the dough with plastic wrap and just let it rest for about an hour. Roll the dough till about 1-2mm thickness, when you roll it, shape the dough into a rectangular shape.  Once you’re done, sprinkle a generous amount of flour on the dough surface then start fold the dough into 4 layers. Ensure you sprinkle the flour in between the folds, this will prevent the dough to stick in between the fold.

Now you can start to cut the dough (from the shorter edge), you can make a thin cut to produce that thin and fine noodle or wider cut to produce a kwetiaw aka. fettuccine kind of noodle. Once you’re done with the cutting, sprinkle the flour on it and scramble the noodle to ensure it doesn’t stick each other.

Colorful noodles

Pork Chop Recipe:

Makes 2 portion

Things you need:

  • 2 thin pork chops, coat lightly with corn flour
  • 6 cloves garlic, minced or sliced
  • 4 red chilli peppers, sliced (you can also use bird’s eye chilli peppers)
  • Dash of light soy sauce to season the pork chops
  • Salt to taste

Things you need to do:

First, add soy sauce to the pork chops. Next, coat lightly in corn flour and fry on medium heat until golden brown and slightly crispy.

Once the pork chops are cooked and turn golden brown, remove from oil and drain on some paper towels. Now, remove the oil from the wok, leaving about 1 tbsp in the wok. Turn the heat to low, slowly add the chopped garlic and chilli peppers into the oil. Fry till fragrant. Add about 1 tsp of salt or to taste. Finally, add back the fried pork chops and coat evenly with the chilli peppers and garlic.

Preparing the noodles:

Things you need:

  • 1 cloves garlic, thinly sliced
  • 2 cloves garlic, minced.
  • vegetable oil from frying the pork

Things you need to do:

Heat the left over oil that you get from frying the pork, once it is hot enough, fry the minced and sliced garlic till crispy and fragrant. Set the sliced garlic aside for garnish.

In a clean bowl, put in some of the garlic and garlic oil (from frying the garlic). Add in some soy sauce, bit of salt and pepper. In another pan heat up a water till boils. Put the noodles into the water and boils it until fully cooked. Once the noodles is cooked, put the noodle into the prepared bowl (with oil inside) and mix the noodle with oil. Mix it well, this step will give a bit of garlic taste into the noodle.

Put the pork chop slice on top of the noodle and garnish it with the fried garlic.
