If I have to choose a good pork belly sandwich or a scrumptious chocolate tart, I would probably choose the pork 3 times more than the tart. Well, I guess that’s why I have a bad cholesterol level.
For now lets forget about cholesterol, and talk more about this yummy pork belly. I have a magazine full of pork belly recipes, but I found one recipe that makes me fall in love with it. It is so simple yet so satisfying. I made this dish about 3 times, because the cameraman likes it so much (well , me too). The pork belly is cooked with a bit of mustard and honey, so we have got ourselves a spicy yet sweet pork belly. I serve the porky goodness with vegetable sushi rice, to bring down the fattiness of the pork. It is a simple good hearty meal ;).
Note: You can substitute the pork with chicken if you want the halal version.
Pork Belly Recipe
Things you need:
For the pork seasoning:
- 1 Tbsp olive oil
- 2 Tbsp honey
- 3 tbsp rice vinegar (i used sushi rice seasoning)
- 2 Tbsp dijon mustard
- Salt and pepper to taste
- 300 gr pork belly, sliced 1/2 cm thick
For the rice:
- 1 cloves of garlic, mince
- a bunch of Broccolini, blanched, cut into small pieces
- salt to taste
- 1 cup of Japanese rice, washed (you can use other rice type but Japanese rice is the ideal choice because it is more sticky)
- 1 Tbsp sushi rice seasoning
For the Pork sauce (I got the idea from Nami – she made a wonderful pork belly rice):
- 2 Tbsp Oyster sauce
- 2 Tbsp Honey
- 1 Tbsp soy sauce
- 1 Tsp cayenne pepper (if you like it spicy)
- 1 tsp garlic powder
Things you need to do:
For the pork. Combine together all the pork seasoning, mix well. Add in the pork, make sure the pork is well coated with the sauce. Leave it for at least 1 hour.
For the pork sauce. Combine together all the pork sauce ingredients in a bowl, set aside.
Prepare the rice. Steam the rice until cooked. Stir fry the minced garlic with a bit of oil until fragrant, then put in the broccolini, cook it together with the garlic. Put a bit of salt to give taste then take it out. Chop the broccolini until it become small pieces.
Mix the sushi rice seasoning with the rice, then add in the minced broccolini. Mix it well. Let it cool down a bit. Once it is cool enough, shape it into burger patty, wrap it tight with cling wrap.
Back to the pork. Fry the pork on a sauce pan (no oil needed because the pork belly already has its own fat) until the sides are lightly browned. Lower the heat to medium and add in the pork sauce. Simmer till the meat has that nice glaze. Take out the meat and set aside. Leave some of the sauce in the pan.
Back to the rice. Take out the rice from the cling wrap, put it on the pan together with the left over sauce. Heat it up a bit till the rice is a bit warm and has that brownish color from the sauce.
Serve the rice together with pork belly.
