Buttery goodness

Nothing better than a buttery, vanilla-scented cookie at Christmas morning. This basic sugar cookies is by far the best cookie recipe that i have ever tried. It’s simple but yet so delicious. You can decorate the cookie with icing sugar and wrap it for the Christmas give away cookies.

Things you need:

  • 227 grams unsalted butter – soften
  • 175 grams icing sugar
  • 1 egg at room temperature
  • 3 tsp vanilla extract or almond extract (any kind of flavoring that you like)
  • 1 tsp salt
  • 2 tsp baking powder
  • 400 grams all-purpose flour

Things you need to do:

Prepare the baking pan with parchment paper.

Sift together flour, baking powder, and salt. Set aside.

Cream together butter and sugar then add eggs and extract. Mix well.  Add in the flour into the wet mixture little by little until well incorporated. Cover the dough with plastic wrap and leave it for 10 -15 mins to rest.

Roll the dough to 2 mm thick and cut cookies into desired shapes, dusting with flour as necessary. Move the cookies to baking pan. Bake cookies at 200 C for 7-8 minutes until tops are appear dry rather than shiny. Do not brown.

Note: if you have a problem moving  the cookies to the baking pan (after cutting), put them for a few mins (1-2 mins) in the freezer. This will make the cookies a bit hard and easier to handle.
