This could be your replacement of the normal french toast that you like.
It’s sweet, crunchy and fragrant. Perfect pair for your morning coffee.
Things you need:
- 1 brioche loaf ( you can make it by yourself or get it from the bakery store)
- 42 gr Unsalted butter
- 1 Egg
- 50 gr Sugar (A)
- 50 gr Almond or Hazelnut ground
- 1 tsp Vanilla essence (or orange zest)
- 100 gr Water
- 100 gr Sugar (B)
- 1 Orange

Making the brioche
Making the syrup
First make the syrup. Combine water and sugar (B) in a sauce pan and bring to a boil over medium heat. Remove from the heat. Slice the orange into 6mm slices then add them into the warm syrup. Cover and let cool to room temperature, then place in the fridge to soak overnight.
Making the paste
Bring the butter and egg to room temperature. Cream the butter and sugar (A) together. Whisk the egg before slowly creaming it in the stages into the butter mixture. Add the hazelnut/almond ground and vanilla essence. Mix into a smooth consistency. Put it in the fridge for a night.
Putting it all together
Slice the brioche into 2 cm thick slices.Lightly coat each side with some syrup. Spread the paste onto the top of each slice. Sprinkle with almond and dust with powdered sugar before baking. Bake for 12- 15 mins. The paste should be light golden- toasted color.
