So i found the recipe from this beautiful site.

This time i follow the recipe as it is. Except for the fact that i change the strawberry with (again) raspberry – since i still have lots and lots of the raspberry puree (which is finally finished).

Panna Cotta

I’m making this panna cotta for a little girl since she basically likes her sweets. It turn out that she only likes the white layer since the raspberry is a bit too sour for her taste :).

So here it is : Berry Panna Cotta

This panna cotta has 3 components:

  • Yogurt Panna Cotta
  • Raspberry Mousse
  • Raspberry Geele

Yogurt Panna Cotta

Things you neeed:

  • 200 ml Whipping cream
  • 30 gr Sugar
  • 1 tsp Vanilla bean paste
  • 3 gr Gelatine sheet
  • 100 gr Plain yogurt (i use vanilla yogurt – so that’s why i reduce the sugar because the yogurt is already sweet)

Things you need to do:
Bloom the gelatine in a cold water. Heat together the whipping cream, sugar and vanilla paste until boiling. Then, take out the gelatine from the cold water, remove excess water and  add in gelatin into the cream mixture

Leave to cool then stir in the plain yogurt. Pour it into the cups and refrigerate until firm.

Raspberry Mousse

Things you neeed:

  • 100 gr Raspberry puree (any berries will do)
  • 10 gr Sugar
  • 2 gr Gelatine sheet
  • 75 gr Whipping Cream

Things you need to do:

Bloom the gelatine in a cold water.

Boil together half of the strawberry puree and sugar until sugar has dissolved. Then, take out the gelatine from the cold water, remove excess water and  add in gelatin into the cream mixture followed by the rest of the puree.

Leave to cool then fold in whipped cream. Pour on top of the yogurt panna cotta then refrigerate until firm.

Raspberry Gelee

Things you neeed:

  • 150 gr Raspberry puree (any berries will do)
  • 30 gr Sugar
  • 2 gr Gelatin

Things you need to do:

Bloom the gelatine in a cold water.

Boil together half of the puree with sugar then Then, take out the gelatine from the cold water, remove excess water and  add in gelatin into the mixture followed by the rest of the puree.

Pour the gelee on top of the strawberry mousse then refrigerate until firm.
